Clif Carrot Cake: $1/Kroger

clif_carrotcake (3)It surprises me that Clif Carrot Cake isn’t a seasonal flavor for Spring and Easter. Mysterious miniature daffodils are poking their heads up in my front yard (to my complete delight as I didn’t jab any bulbs in there!) reminding me that Easter really isn’t too far away. Store shelves aren’t shy about broadcasting the eminent arrival of the basket and egg-wielding rabbit, with Valentines quickly shoved aside in favor of pastel-hued grasses, candies and bizarre limited edition treats like Peep flavored Oreos. Clif Carrot Cake bar is flavored like one of my least favorite desserts (falling behind with cheesecakes, key lime pie, dry cookies like biscotti, and fruit-flavored popsicles) but I’ve made a successful carrot cake for an Easter when Joanna was much, much younger, incorporating both shredded carrots along with jars of carrot baby puree for extra moistness and orange zip. With a light glaze dribbing around its George Hamilton-hued exterior, it was a pretty good dessert.

I wouldn’t go out of my way to buy this flavor of Clif bar again, but it’s the way that I felt about my one good carrot cake experience … I’m alright with it maybe once a year, so in my head, I’ll pretend that Clif’s Carrot Cake IS an annual Eastertime flavor and pick up one in the Spring, have my single Cadbury egg, then return to my other favorite Clif bars along with savory veggie Texas Pete eggs the rest of the year. 3/5
